Monbento Original #75

 


This was my solution to feeling beyond overwhelmed and exhausted: A rice cooker meal with clementine segments and a salad.

The rice cooker thing is basically an assortment of vegetables (red bell pepper, edamame, mushrooms, peas, scallions), rice, water, some sauces I had (soy sauce, oyster sauce, sesame oil), and some chopped smoked tofu cooked in a rice cooker until done. I topped it with sesame seeds and, when eating, vegan sriracha mayo.

The salad was stuff in my fridge--romaine, grape tomatoes, cucumber, yellow bell pepper, and avocado--with a homemade miso vinaigrette (kind of following this recipe).

It wasn't the best thing I've ever eaten, but I mean that literally--I wasn't disappointed by this. I knew what it was likely to be like and I was right. It got the job done, without being unpleasant. Right now that may be the extent of my abilities.

I've had to turn comment moderation on because there has been an absolute onslaught of spam, but I want to say I appreciate everyone who commented last week (or at least, the real people who did!). I don't know how things will turn out, and I'm still disoriented in some ways, but I'm holding as steady as I can.

  1. Love that I'm not the only one who's made rice cooker meals as you've described here. Practical and sustaining, I say. And here is an important flavor suggestion: I make this sauce which is, at the risk of sounding dramatic, unbelievable. I love this sauce so much. It makes 'the dish', whatever dish you are making (would have transformed your rice cooker meal, I promise). The recipe is from a fav site, Minimalist Baker (link below). Here is the simple recipe (which I always double--you will want extra of this):

    SAUCE
    2 ½ Tbsp tamari
    1 ½ Tbsp avocado (or olive) oil
    1 Tbsp toasted sesame oil
    1 Tbsp maple syrup
    1 Tbsp grated fresh ginger (1-2 inches ginger yields ~1 Tbsp grated)
    2-3 tsp chili garlic sauce (or sriracha)
    1 Tbsp lime juice
