Sequestration Meal #78

A while ago I found a recipe for vegan breakfast enchiladas at Vegan Guide to the Galaxy. For various reasons, I didn't have all the ingredients I needed for that recipe. But I did end up making a version of my own with stuff I did have on hand. And though good for breakfast, they were also good for lunch. It's really just tofu scramble and veggies inside, and my sauce is salsa verde that I pureed in my immersion blender. I still had some Daiya cheddar and some flour tortillas. Usually I wouldn't make enchiladas with flour tortillas but they were in the original recipe so I went with it.

It was nice! Friends were kind enough to bring me some groceries to supplement my own ordering, so I even had some Tofutti sour cream (the very best vegan one I've found yet) to have with my tofu scramble enchiladas.

    1. I can deal with spice sometimes, and sometimes not. But your sauce can be as spicy as you want, really!

  2. Oooh, breakfast enchiladas sound great. I have never thought or heard of that, but there are breakfast burritos and breakfast tacos, so of course it makes excellent sense.
