What did I say about how I could sustain myself well on a batch of Mexican rice and a can of refried beans? Here's something I've made often (not just in isolation) but have never shown you: A deconstructed burrito bowl.

This one starts with a base of refried beans, which is then topped with Mexican rice. I melted some non-dairy mozzarella into it and topped it with Tofutti sour cream, sliced black olives, and dried cilantro. It's easy to warm the fajita-size tortillas with this. Just put them over the bowl like a lid until the steam softens them.
