Sequestration Meal #326

 

Because it could use some things I had around in the fridge, I made a variation on an omnivore recipe I found for a "cheesy enchilada rice skillet." I should have followed my instincts, since it had you cook the rice separately, and why would you do that if you have a flavorful broth to cook it in? But anyway, I had a passable meal of rice mixed with black beans and veggies and enchilada sauce, which I then topped with some non-dairy cheese, black olives, tomatoes, scallions, and Tofutti sour cream.

Presentation was important for this, too, though the toppings really improved matters; I don't often pull out my little carrot dish but it's so fun!

Why is it that I always end up deciding to make a huge batch of merely mediocre things? Well, that's where we are right now, but I'm pretty sure I can improve the leftovers, so even if I do have to eat this once a day for most of a week, that's life. And this did a lot for pantry-clearing, so I won't complain.

    1. It rarely makes an appearance because it's a bit awkward to use, but it makes me smile.
