Sequestration Meal #328

 

There are still some easy things in my pantry that I'd been reserving for when I have less energy and interest in cooking; it's always important to have something on hand for those days and I don't intend to be rid of that even after I'm done with pantry-clearing. (But if I cleared it and had to replace it, that wouldn't really help matters in this moment, so I saved it for when I needed to use it.) This was the day I needed to finally make some Pad Thai.

I had a bottle of incidentally vegan Pad Thai sauce (Annie Chun's), rice noodles, and peanuts in my pantry, and some JUST Egg, veggies, and lime in the fridge, so why not? Although I might ordinarily want to put tofu in something like this, on this day JUST Egg was all I needed. The veggies were pretty simple--just some scallion, garlic, bell pepper, and zucchini. And so I cooked, and it was quick, and I didn't have to go to the store this week.

  1. Love a simple meal like this! I have some assorted vegg-style scramble powders taking up space in my cupboard, I never think of using them in dishes like this. But that is a very good idea! I don't really like them just as a scramble.

    1. I think vegan scrambles are like vegan yogurt: They usually don't work for me on their own, but putting them with other things can elevate everything.
