I love Eating by Elaine's vegan pumpkin risotto, which does not require endless stirring, so on a day I couldn't muster much interest in cooking (which, honestly, is most days now), I popped open a can of pumpkin puree and whipped some up. It is so good. I couldn't possibly improve upon this recipe. She says to use homemade pumpkin puree, which I am sure would be lovely, but I just had canned and it was wonderful.
Sometimes I love the medidative state of stirring a risotto, but I really have to be in the right mood for it. I love easier options like this!
ReplyDeleteMeditative state...maybe! I like it in winter when it gives me an excuse to hang out by the flame on the range for a while, but in summer it's uncomfortable. And usually in all cases easier seems nicer.
