More easy food from a diminishing freezer stash: Some orange chickenless morsels from Trader Joe's, garnished with sesame seeds and scallions and served over rice.
I'm realizing that I'm doing a not-that-great job of eating my vegetables lately (oh, the irony, a vegan not eating her veggies!), and I should work on that a bit more. But this was good and kept me going, and I'm going to say that it was good enough for its own moment. Eating not enough veggies is better than not eating at all, obviously, or just living on crackers in bed. I'm making some steps in a good direction. I will find the strength to eat some veggies soon. I mean, I like veggies, after all. When one has to prioritize getting calories in, they're not ideal, but they're good things it is preferable to include. (Thank you, Captain Obvious!)

ReplyDeleteIt was good! I was glad there was something easy in my freezer still. A benefit of being the type to generally keep a jam-packed freezer, I guess!
