Back to work, friends! And here's a favorite lunch: Leftover spaghetti and veggie meatballs with non-dairy Parmesan and a basic salad with a cup of homemade vegan ranch.
The salad was made of romaine lettuce, some leftover steamed broccoli, tomato, red onion, cucumber, yellow bell pepper, and carrots. The carrots, thanks to a Christmas gift of a julienne peeler I received this year, are julienned beautifully.
Nothing about this really needs further commentary, other than to say, sometimes having the same basic meal is its own comfort in difficult times.
