Sequestration Meal #671

 


Occasionally, I stare down the contents of my fridge and just wing something. I have been doing it less overall, but desperate times call for creativity. So here we have a bowl of roasted creativity.

I have some quinoa cooked in veggie broth that is mixed with sunflower seeds and cilantro, some basic roasted brussels sprouts, roasted sweet potato slices, and baked marinated tofu. I covered all that in some homemade "honey" mustard sauce and a sprinkling of pumpkin seeds. A bit odd, maybe? Yes. But it was delicious and required very little of my shoulder's involvement to complete.
