Staycation Meal #12

 

My early vegan self would not have appreciated this, but the more advanced version thought it was great, so I'll accept it! Here we have some spaghetti with jarred mushroom sauce, chickpea zucchini meatballs, and a raid-the fridge salad (romaine, red onions, red bell pepper, croutons, and homemade ranch), all topped off with vegan Parmesan.

The meatballs recipe is from Making Thyme for Health. They're fine, though soft; I'm used to this style of food these days but that's why I say early vegan me would not have appreciated them. I liked them fine, but in my opinion they seemed like they belonged with rice more than with pasta.
