Dinner Bowl #81
Here we have mashed potatoes topped with drunken mushroom gravy (recipe from Connoisseurus Veg) and some Impossible meatballs with steamed carrots and cauletti/caullini.
This was a homey bowl of comfort food on a day I was dealing with a few distressing things, and it was delicious! It also finished off a tiny bit of whiskey I had around, which is why the gravy was on my pantry utilization quest list. The whiskey gives the gravy an intense savory flavor, though it did leave me with a slight aftertaste. I needed something relatively easy, so I simmered Impossible meatballs in the gravy and microwave-steamed some veggies, which meant that the hardest thing to do here, minus the gravy, was to cut up and boil the potatoes for the mashed potatoes.
I finally got some butter potatoes, which truly are the superior potato for mashing, so I was really pleased with that. They never seem to have the 5 lb. bags on hand, but this time I just bought the pricier loose potatoes. I couldn't deal with yet another bag of red potatoes for now.
Cauletti was new to me, but I really like it! I don't know how often I'm likely to buy it, given the cost, but it was fun here.
All in all, a perfectly wonderful meal. I had plenty of gravy left not only for the leftovers of this meal, but also had enough to freeze a few small containers to use at some other instance where gravy would supply something special. (One reason it's been so nice to have a more-empty freezer is getting to squirrel things away again.)
