Mashed potatoes and slow cooker sauerkraut tempeh stew (recipe from Ugly Vegan Kitchen) with a parsley garnish.

This wasn't summery whatsoever, but I made it because I wanted some easier options. Sometimes, you just need something easy, and popping things in a slow cooker is easy. By the time I ate it, I didn't have much of an appetite, so hence the small bowl.

It was a very strong sauerkraut flavor. I think I would have preferred this as a cabbage stew, made with fresh cabbage, but it wasn't terrible. I made the full batch, so there will be some in my freezer for later, but if this turns out to be one of those things that I develop an aversion to eating over time, I'll have no qualms about chucking it if needed. Sometimes things don't work out.

But the mashed potatoes are great!
