An improvisational thing that worked beautifully: Sweet potato TVP kidney bean chili with cornmeal dumplings.
Sometimes, the plan I have doesn't seem appealing, and I make something else. I try not to do that too often, but when you have to do it, you have to do it.
I had to do it. I had my reasons.
The chili used part of a can of tomato sauce that was in my fridge and needed using and the core of a cauliflower, chopped, which may sound weird but trust me: It was perfect. And, yes, onions, garlic, etc., too. It was chili. It finished off the very end of a bag of TVP that was mildly beyond its sell by date, too.
I don't recall if I've made dumplings for chili before; I don't think I have. These weren't perfect--you see them somewhat torn up and a bit dense--but they were tasty and somehow the perfect thing to have with this stew-like meal.
