Dinner Plate #32

 


Here we have easy summery food: Vegan shells and sauce (from a box), Impossible meatballs simmered in bottled barbecue sauce, a fresh ear of corn, and creamy cucumber salad (from Fannie Farmer Cookbook). 

I was just not into cooking, really, but needed food, and this was my compromise. One has to have fresh corn at least once in the summer, or else why are you bothering enduring the heat at all? The meatballs turned out amazingly well, and I used up an old bottle of barbecue sauce I've had in the fridge a bit too long. The sauce mixed with the pasta sauce in a surprisingly delightful way, too. 

The cucumber salad has dill in it now, rather than parsley as it did the last time I made it. I prefer dill, because it's so pleasant a flavor. If I'd done a better plating job, you'd see it more beautifully, but trust that it was better than it looks here.
