What I Ate in a Day #49
While trying to look on the bright side of summer, I remembered that the literal brightness gives me an opportunity I don't as often have in other seasons: I get to show you everything I ate in a day because the lighting allows it! So here we go, with a round of things you may partly recognize:
I had some leftover millet flour pancakes (you'll note these are a bit wonky; I had trouble making those!), so I had them with some fresh nectarine chunks and some non-dairy yogurt. This is the Siggi's plant-based vanilla, so it has a lot of protein. Even so, this was very light, so I needed something more.
So I made a moringa moon milk! I drew inspiration in part from a recipe from Moon and Spoon and Yum (a great place to find moon milk recipes), but put my own spin on it. This is, basically, 1 cup soy milk, 1 medjool date (pitted), 1/2 tablespoon moringa powder, 1/2 teaspoon coconut oil, 1/4 teaspoon pink salt, and 1/4 teaspoon cardamom, blended up until smooth and then warmed up on the stove. It's a remarkably addictive drink and I often have this in the morning when I want to round out a breakfast. It's one of the only ways I've found that I truly love to use moringa powder, so it also fits my pantry utilization quest.
For lunch, I had some of the salads I'd prepped over the weekend: Carrot quinoa salad with broccoli sprouts, and creamy cucumber salad. I also made half a Tofurky-and-spring-mix sandwich with some mayo and whole wheat bread and put squares of that in my bento box. Finally, I had more nectarine chunks. I adore nectarines in the summer!
For dinner, I had some leftover broccoli casserole and a few chick'n nuggets (made in my toaster oven) with homemade "honey" mustard. I didn't have that much of an appetite, so having these odds and ends seemed fine. But I guess I whetted my appetite, so I made a dessert toast.
Not pictured, I also had a cup of herbal tea with every meal, and my day included my usual supplements (a multivitamin, algae-based DHA, Vitamin D, and a turmeric tablet).
This was a pretty good day!
