Pack-a-Snack #112
I used to show you little snacks regularly, but I got out of the habit, in part because I got into the habit of just grabbing things like oat bars. But I'm trying to get back to prepping some of my snacks, so here we have a few apricot ginger energy bites (recipe from Eating Well, using agave for honey).
These were remarkably good! I love dried apricots, of course, and they go well with coconut. Here, they're blended up with tahini, ginger, agave, and oats, too. It was a wholesome treat that was easy to pack and just right for a pick-me-up during the day.
