I finally tried it! After having it on my Pinterest board for who knows how long! I have a tip, because I have actually had this quesadilla a few times, and the first one wasn't that good: salt the mixture before you put the cheese in. That made all the difference for me. Maybe I just didn't put enough salt into the pumpkin mixture in the first place, but seriously: do this and you'll thank me.

If you season it properly, it's pretty great--an unusual meal, but the flavors go well together for some reason.
