Monbento Original #39
This is leftovers, mostly, of a meal that didn't go according to plan: Potato salad, clementines, some buttery lemon tofu (recipe at Plant Based on a Budget), and sautéed green beans with cherry tomatoes (veganized from Taste and Tell's recipe). I had wanted to have the tofu and beans with couscous, and it turned out I only thought I had couscous, and didn't. Such is life.
This does, however, mean that if you're looking for gluten free options, this is one!
The tofu looks lovely!
ReplyDeleteIt is frustrating when I think I have something but then I don't! Thankfully most times I am able to do a work around.
Fortunately this does mean my pantry is shrinking and I am no longer keeping EVERY POSSIBLE THING on hand.
