Sequestration Meal #480
I made this primarily because I had the ingredients on hand. This is lemon-dill couscous (recipe from Cooking Classy but using dill instead of parsley), tempeh-potato croquettes with creamy dill sauce (recipe from The Colorful Kitchen), and carrots.
I don't know if my potatoes were too big or what, but these croquettes really didn't hold together very well for me. They were also just okay, not really good enough to be worth the effort. But I am glad I made them! They helped me hit my nutritional goals for the day, they used up stuff I had on hand, and they meant I got to avoid the store a bit longer.
Excellent dill content.
