Sequestration Meal #482

 


Here we have an easy vegan classic: A sweet potato (actually half of a giant one) topped with some spiced black beans, avocado slices, and non-dairy sour cream.

It's truly one of the very easiest--and most allergy-friendly--of dinners to just throw a sweet potato in the slow cooker and then come back later to top it with something quick. The beans were almost the recipe from Nourish and Fete for Kicked-Up Skillet Black Beans, but I left out the jalapeno and added garlic, because it was what I had (and also: garlic).

If you need this to be soy free, you'd just leave off the tofu-based sour cream.

All in all, this was a great meal! I'm getting through clearing-the-decks mode without the slightest sense of deprivation.
