Insulated Jar & Sides #50

Garlicky white beans and spinach with tempeh bacon for added flavor, yellow rice, a tiny bit of cooked carrot I had leftover from earlier in the week, and more of those tiny, pricey-but-delightful multicolored tomatoes.

I'm honing in on the white beans and spinach. I think I may be getting closer to making something I really love. But right now it's fine, anyway.


  1. This looks lovely and savoury! I almost always take some little red snacking tomatoes to work to go with my lunch, but it is fun when there are other colours as well.

    1. I've been buying less tomatoes recently because they've seemed so expensive this winter. I'm looking forward to a summer of freer access to tomatoes.
