Recipe: Strawberry Banana Breakfast Sandwich

This is really more of an idea than a recipe, but it's definitely too good not to share.

Breakfast sandwiches are typically savory. A vegan breakfast sandwich might be packed with veggie bacon, tofu scramble, a mung bean omelet, vegan cheese, etc. But what about a sweet one? Sometimes I want something fruity.

Start by toasting two slices of bread. Spread one with almond butter and top with sliced bananas and cacao nibs. Spread the other with chocolate hazelnut spread and top with sliced strawberries and flaked coconut. Honestly, at this point you have a choice:

You could just have yourself a pair of fruity toasts, both delightful. Or you could close these open-faced sandwiches and make one, epic fruity breakfast sandwich. The choice is yours.

I recommend having this with a cup of hot tea.


  1. I love this! I am a big fan of peanut butter, banana, cinnamon, and blueberries but I normally have them open faced. But combining into one giant fruity delicious breakfast delight? Yes please
