Sequestration Meal #20

I ran across a recipe called "Anything-You-Have Coconut Curry Soup" at Pinch of Yum and, though I didn't have the things that the original recipe had (or really even all that close to it), I did manage to make a single serving of a coconut curry soup that I loved anyway after reading it. I did make the soup base similarly to the original recipe, though I just had curry powder, not curry paste.

Curry powder rescues so many things, honestly!

I also lightly steamed my broccoli, carrots, and mushrooms because I didn't want them to be totally raw. Next time I might simmer them in the soup for a bit, though it would not make for such an attractive composition (this was, as said by the recipe developer, like "salad soup"--kind of a composed salad in soup form--or more like a hot smoothie bowl, maybe, in my opinion). My tofu stuck to the pan so badly I gave up on getting it brown. But it didn't matter.

A garnish of sesame seeds and a bit of scallion finished it off. It's hard to imagine that when I ate this I had been in isolation for 19 days in a row. It was the best meal I've had in what feels like a long time (and probably isn't as long as it seems; life is a blur).

    This looks delicious. I love the bright colours (I am with you in cooking the veggies a bit first so they are not raw) and it just seems really comforting.

      Coconut milk is a humble little revelation, and I'm learning, in these using-the-pantry days, to appreciate it more.

  2. Mmm looks yum! One of the things I've noticed about lockdown is how much I am enjoying my food. It's nice to have enough time to cook and eat.
