Sequestration Meal #32

When my neighbor was headed to a produce market and asked if I wanted anything last week, I asked for purple cabbage so I could make some summer rolls. I needed some color. Normally, I would have put tofu in my summer rolls, but I just made extra peanut butter dipping sauce instead this time around. Though the pickled daikon radishes would be beautiful in the rolls with the other colors, they aren't something I want to dip in peanut butter, so I just had them on the side.

These were worthy of a close up, I think. The filling in these rice paper wrappers is black sesame seeds, romaine lettuce, purple cabbage, red bell pepper, cucumbers, and carrots. I would have loved to have had tofu in them, but tofu is sold out everywhere and I'm reserving tofu for meals where there is not already a major protein source (i.e., the peanut butter) for the moment. I may not need to do that, but we all manage our anxieties in our own ways.

This was a good lunch! Summer rolls are remarkable things.

  2. I love summer rolls! You just reminded me that I have some rice paper in my cupboard. These are so colourful and beautiful!
    And extra peanut sauce is always a solid plan.
