Sequestration Meal #36

Sometimes, I just want something really simple. So this is rice with a doctored-up can of Heinz vegetarian beans in tomato sauce. I added sauteed onion and sweet red pepper and some barbecue sauce to the beans, put the whole shebang over the rice, and garnished it with scallions. I really loved this. As with many things these days, I felt mildly sad when it was gone, because I would now have to order these beans by the case to eat them again, and I don't know when I will want to buy 24 cans of them at once. So this is my last of this standby meal for a while, but I know there are a lot of other things out there for me, so I'm doing my best to enjoy what I have, even if it is the last of it.

What kinds of choices are you making with groceries that you didn't expect?

  1. I googled Heinz Vegetarian Beans, and they seem to be similar to what in Australia we would have as Heinz Baked Beans, which you can just buy in whatever number you want, small or large, all sorts of tinned sizes. I love baked beans!

Normally someone would shop in our house every few days, so there would always be a bounty of fresh greens, vegetables, and soft fruits. But these days we are reliant on our weekly grocery delivery (and I know we are lucky to get a weekly resupply), but I've had to revise my normal habits of greens greens greens.

    1. I can buy them at the grocery store if I go there, but it's not available, except by the case, in any means I could get it delivered. I've only ever seen it in two sizes, though, and almost always just in one--I think it's either in the commonly found 15 oz. cans, or less commonly found 8 oz. cans. But it's not the only option for vegan baked beans (including, I suppose, making them myself!).

Some greens are sturdy enough to last a week: head lettuce still on the head, kale, and spinach all last me a week or more in the fridge.

    2. Annoyingly even though there are many greens available if you are able to go into the shops, their online offerings are limited and frequently unavailable. No spinach for the last couple of weeks! But I have been enjoying cos lettuce. They do sell kale, but it is not something I would buy unless I can see it first myself because sometimes it is already yellow and full of holes.

  2. Oooh this looks so good! I guess the grocery I didn't expect to use as much as I have is pasta. I am just not a pasta person but there is always a box around just in case. I haven't made pasta in the traditional sense as I've been using it in chick'n noodle soup but it's definitely not something I'd expect to turn to!

    1. I feel that way about potatoes! I really need to make peace with constant potatoes because right now they're easier for me to get than the other carbs.
