Sequestration Meal #120

This was not my original plan--but I think it may have been better than the original plan! I abandoned the idea of goulash when I found I had no tomato sauce on hand and decided to make raid-the-fridge soup instead.

For this one, I started by sauteing onions, carrots, and yellow bell peppers in olive oil with some salt. Then I added garlic, parsley, and chopped grape tomatoes. When that had cooked to my liking, I added some No Chicken bouillon, water, chopped mushrooms, and Gardein meatballs. About 10 minutes later, I added tubettini pasta. Toward the very end of the cooking time, I stirred in some chopped fresh spinach.

This smelled and tasted amazing. I could have done without the meatballs, but I wanted to put them in. I had some Town House crackers with my soup. Summer doesn't scream soup but sometimes, it's just what I need--and I don't have to turn on the oven!

    1. Yes, soup goes with all seasons! But some seasons yell soup louder than others!
