Recipe Test: Vegan Banana Cake with Lemon Frosting and Walnuts from Loving It Vegan

Loving It Vegan has some great cake recipes. I previously tested the pineapple upside down cake recipe Alison Andrews shared there, and when I had too many bananas again and couldn't face down another smoothie, I decided to try her vegan banana cake recipe. I cut the recipe in half because I am just one person and eating an entire 9 x 13 pan of cake is a bad idea, but otherwise followed the recipe as directed.

I erred in choosing this because it turned out to be much hotter than forecast on the day I made it, and having the oven on made me a bit miserable. Also I think that may be why the lemon frosting melted a bit, even though I'd let the cake cool for about seven or eight hours before frosting it. But none of that ultimately changed how much I enjoyed this cake!
I don't often bake cake except my mug cakes on occasion, because I'm on my own here and there's nobody else to eat it with me. But sometimes you just need cake, and this one seemed pretty wholesome as cakes go, with fruit, soy milk, walnuts, and flax seeds. Maybe I needed to rationalize; I don't know. But the flavors were so perfect together, and the lemon frosting was a nice tangy topping that hit many of the notes that cream cheese frosting would.

I wish you were here to give cake to; I'd make cake a lot more often if I was sharing! But sometimes I just end up eating cake twice a day for a little while, and that's all right, too.
