Sequestration Meal #169

 

A perpetual favorite comfort meal: macaroni and (non-dairy) cheese, broccoli, and beans and (vegan) weenies.

This macaroni and cheese was semi-homemade--not the cashew sauce vegans often make, and not from a box, but somwhere in between in terms of effort. I made a white sauce using Earth balance, flour, soy creamer, onion powder, garlic powder, salt, and pepper, then through in some chopped Chao cheese slices and a handful of Daiya mozzarella. It did the job.

Also, it may be a bit silly, but I was excited about this broccoli a friend brought me from Wegmans--so much better quality than what I've been getting for months. Not sad broccoli--appealing broccoli! So green!
