Sequestration Meal #263


Having almost no energy, and only a slight appetite, but still committed to trying to have a balanced meal, I made this sandwich. It was made of white bread, toasted, with smashed white bean salad (this recipe, using Vegenaise and scaled down), sliced red onion, and baby spinach. I'm kind of glad I didn't have tomatoes, because I probably would have put some on this if I had them, and they might have overpowered the white bean salad a bit. I have definitely become a convert to fresh lemons--the lemon juice really makes this, I think, along with the celery seed. Celery seed is such an underrated ingredient.
