Dinner Bowl #27
I don't want the oven to be compulsory, but at this point, it almost is! I am so excited to get to roast vegetables. So here we have the fall harvest grain bowl recipe from The Savory Vegan. It consists of creamy orzo and arugula (what else? I'm in arugula forever mode...) and seasoned roasted sweet potato and cauliflower with hummus on the side.
I had purchased some ready-made hummus in my stressed-out mode, so I had that for an easy side, though it is also directed by the recipe. This was a spicy red pepper hummus that was far spicier than I anticipated, but still delicious. If you haven't dipped roasted vegetables in hummus, you're missing out.
The orzo got a bit dry when cooking so I had to add a few splashes of water here and there. Otherwise, this was a lower-effort meal than a lot of mine have been lately--somewhere in between my "can't bear to cook" mode and "cook everything from scratch" mode. I'm not good at balance, on the whole, but sometimes I get it right.
Yummmmmm! I think i have some orzo in the pantry, i definitely need to make this! Roasted veggies are one of the best parts of fall 🙌🏻 especially roasted cauliflower, yum!
