Dinner Bowl #29
I don't know why exactly this was calling my name, but it was. Here we have some green rice (from a recipe I won't give you because it was too dry and ended up burning the bottom), corn with red pepper and onions, cauliflower fritters (recipe from Ela Vegan), half an avocado, and some non-dairy sour cream.
This was an okay meal. I wanted it to be so much better than it was, and I think it would have been if the rice had turned out better. I will be trying that one out again, though--I think I can get the hang of it. The flavors were good, in any case.
The cauliflower patties, made from chickpea flour, were great, on the other hand, and went really well with the sour cream and avocado.
I haven't had avocado in a long time, but I'm so glad I picked up a bag. It's so nice to have them on hand for meals like this that just need a little bit of something, especially something green and fresh.
I had less corn than I thought I did--the bag in the freezer was almost empty--so this was more peppery and oniony than I intended, but at least I know I like those veggies. No real harm done.
Without the sour cream, this meal would have been free of all major allergens, if you're looking for those options.
The cauliflower fritters sound amazing! I have chickpea flour and frozen cauliflower, I'm definitely going to make them! It's too bad the rice didn't work out.
