Sequestration Meal #31

It has been ages since I had this moroheiya noodle salad, the basis of my first-ever vegan lunch on this blog. I had written off the idea of ever having it again, because the noodles couldn't be had in the stores I do most of my shopping. But then I found the noodles at H-Mart a long while ago and snapped them up, and I just  realized, to my amazement, that I had almost all the ingredients on hand here in my isolation. I have always loved this salad and I think I loved it in my isolation even more, although I had to top off the rice vinegar with apple cider vinegar and use dried cilantro instead of fresh because that's what I had.

    1. Weirdly, I have never had the urge to make anything else with the moroheiya noodles. Just this salad, over and over.

    1. It's pretty easy, too! I think it might work with regular ramen noodles, but I've never tried it.
