Sequestration Meal #253

 

Good news after the tamale disaster: A perfectly delightful meal of doctored canned refried beans, a quesadilla, Mexican rice, and Tofutti sour cream. The quesadilla had Violife mozzarella, bell pepper, sliced black olives, chopped tomato, and a bit of chopped onion, so I guess I hid most of my veggies (that's the way it tends to go with me and Mexican food).

The beans weren't that hard to rescue--I sautéed some onion in Earth Balance, then added some bottled hot sauce and the beans and warmed it through. This isn't even remotely as good as the beans I used to get from Goya, but it's best not to think about these things too much. They were good and I have ideas about how else they can be improved later on.
