Sequestration Meal #255

 

An improvisational dinner: Spinach with caramelized onions; a pepper half stuffed with a mixture of TVP Italian sausage, quinoa, jarred spaghetti sauce, and Violife mozzarella; and mashed potatoes.

This is the sort of meal that makes me feel like I'm doing a good job taking care of myself. Unfortunately, this is also the sort of meal that sounds easy and simple and is and yet inexplicably takes nearly two hours of effort because of all the prep work and dishes to wash. But sometimes that happens, and fortunately I have leftovers to help take me through the week coming up now. Plus, let's get real. What else am I going to do by myself here anyway?

I usually mix the TVP with rice in my stuffed peppers, but I decided to try quinoa. It was good, but not as good as the rice. Still, I am glad I tried it. It's good to try new things.

  1. Looks fantastic! It’s so cold here that the last few days have been soups with bread. This has me craving mashed potatoes! Leftovers are always welcome
