Sequestration Meal #628

 


I constructed a pretty good meal from the dregs of some produce I still had: A zucchini headed south, some tomatoes starting to wrinkle, a bit of onion, a carrot. I made some penne with tomatoes, onion, and zucchini with fresh basil from my window and topped it with some non-dairy Parmesan; I was inspired by this recipe but really just winged it. I also used dried herbs and bottled lemon juice to make this recipe for pan-fried marinated tofu from Cook for Your Life, and steamed a carrot in my microwave. On top, I sprinkled some parsley I had growing in my window.

This was good! Definitely not perfect, but good enough. As my low spend month was drawing to a close, I couldn't have asked for more.
