Sequestration Meal #100

After taking the photo I realized this wasn't the ideal way to serve this, so I dumped it all in a bowl and stirred it up. But it was, essentially, a half recipe of the Tofu Stir-Fry with Peanut Sauce recipe at The Modern Prosper.

I thought it would be prettier to top the stir fry with the sriracha sauce rather than mixing it in first, and it was, but I may have gone a little overboard with how much I used that way! I had some rice noodles to have with this and the whole thing was fantastic. If I made it again, I'd add more water, because the sauce was so thick (and indeed, I did with the leftovers), and probably put more veggies in than the cabbage and broccoli requested. But I was really happy with this meal overall. It had been a long time since I'd made anything that had real stick-to-the-ribs qualities about it, but that much peanut butter makes me feel really full in a way I rarely do.

This is my 100th "Sequestration Meal" on the blog and I've been in isolation for four months. I know someday I will probably get to mingle with other people again, but in the meantime, I am grateful to all of you for joining me for all those meals, and helping me to feel a little more connected to the world.
