Sequestration Meal #620

 


I had a little bit of tofu left over from something else (the rest of the tofu was for a breakfast thing; you'll see it later), so I decided to make a sandwich. I had a bagel in the freezer, so that was what I used for the bread. For the sandwich itself, I roughly followed this recipe from Healthy Happy Life, with somewhat different fillings aside from the maple tofu and the spicy "secret sauce."

I filled the sandwich with cucumber slices, slices of grape tomato, romaine lettuce, and red onion. This was quite messy, but really delicious! I would probably have this even if it wasn't a low spend month, so this lunch was really an exciting one.
