Sequestration Meal #624


Spend little; eat like royalty: I'm doing really well with this one! I have cheesy quinoa with broccoli and chickpeas (recipe from Zen and Zaatar), seamed carrots, and corn sauteed with red bell pepper and onions.

I really love this quinoa dish. I've made it several times. It's so creamy and delicious! It could be a meal on its own, but even in low spend world, I'm still committed to getting my veggies in, so I made some quick, inexpensive sides. 

This was really satisfying. One more meal down!

  1. I've really gone off quinoa lately, but cheesy creamy quinoa sounds like it might get me back into it.
