Recipe: Tropical Pineapple Coconut Smoothie Bowl (Vegan, Gluten Free, Soy Free)

I make no apologies for being really fond of smoothies. But I don't tend to share them here unless they're at least a bit unusual. Nobody needs another chocolate banana smoothie recipe! Well, here we have a recipe worth sharing: a tropical pineapple coconut smoothie bowl with macadamia nuts and kiwi! I put so many toppings on it you can barely see the smoothie, and you can't tell how thick and beautiful it was with a nice swirl in it. But trust me: This is a thick smoothie bowl, everyone! You can make fun swirly designs in it with your spoon if you like!

This is a vacation in a bowl. Sweet, with a lot of texture contrasts. But of course you can put any toppings you want here. Mine are just a suggestion. Other options include chia seeds, granola, sesame seeds--the choices are all yours!


Tropical Pineapple Coconut Smoothie Bowl
Serves: 1

Smoothie mix:

1/4 cup coconut milk (you can use something else, but it won't have that pina colada flavor)
2 tablespoons coconut water (or use more coconut milk) (I used Vita Coco's pineapple-infused coconut water for extra pineapple flavor)
1/4 cup coconut yogurt
3/4 cup frozen pineapple
1 frozen banana

Toppings:

1 tablespoon coconut flakes
1 thick slice fresh pineapple, chopped
6 macadamia nuts, chopped
1/2 kiwi, chopped
1 teaspoon hemp seeds

Start by prepping your toppings. Chop everything that needs chopping and toast the coconut flakes in a dry pan until golden over medium heat. Set aside.

Add all of the smoothie mix ingredients to a blender. Blend, stopping to scrape the sides when necessary. Add more coconut milk or coconut water if needed to blend, but don't add too much--you don't want a thin mix!

Spoon the smoothie mix into a bowl. Add toppings and serve immediately.

  1. Oooh, this looks like a wonderful breakfast coming in to summer! I like to use soy or oat milk and yoghurt, and some coconut extract, so I can get the pina colada flavour but not the coconut fat associated grossness I get. Your bowl looks so pretty.
